Refreshing Gazpacho Soup

Spicy, yet refreshing, chilled gazpacho soup! Made with fresh tomatoes, bell peppers, cucumber and onion as key ingredients, gazpacho is a deliciously satisfying way to enjoy the seasonal flavors of summer-fresh produce.

Besides their great taste, ripe tomatoes are a super source of lycopene and vitamins A and C! 

Ingredients:

  • 2 cucumbers, halved and seeded
  • 2 red peppers, cored and seeded
  • 780 ml of V8 juice
  • 8 med size fresh diced tomaotes
  • 1 Vidalia Onion
  • Pepper to taste
  • Dash of tobasco sauce

Directions:

Place each chopped vegetable (cucumbers, peppers, onions, diced tomatoes) separately into a cuisinart on the pulse mode. Make sure they don’t turn out too mushy (I like it chunky)! Place in large bowl. Add  the V8 juice to a bowl of the vegetable mixture and add a dash of tabasco sauce for a kick. Mix well. Allow to sit in refrigerator for several hours to chill and develop flavors.

Optional:

Add strawberries to sweeten the flavour.

Makes up to 12 medium sized bowls
