Healthy Burrata & Nectarine Salad

🌿 Ingredients:
Makes 4 servings
For the Salad:
- 2 ripe nectarines, sliced into wedges
- 1 ball (125–150 g) fresh burrata
- 4 cups arugula or mixed greens
- ½ cup fresh basil leaves
- ¼ cup toasted pistachios, roughly chopped
For the Dressing:
- 2 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey (optional)
- Flaky sea salt
- Freshly cracked black pepper
🥄 Directions:
- Whisk together the olive oil, lemon juice, Dijon mustard, honey (if using), salt, and pepper.
- Arrange the arugula on a serving platter.
- Scatter the nectarine slices and basil leaves over the greens.
- Tear the burrata into large pieces and place it on top.
- Drizzle with the dressing.
- Finish with toasted pistachios, extra black pepper, and a pinch of flaky salt.
