Almond Butter Pancakes
Makes 3 large pancakes
1 cup almond flour
1⁄2 cup almond butter
2 tsp of cinnamon
Pinch of sea salt 1 cup almond or coconut milk Splash of vanilla (optional)
Coconut oil Splash of maple syrup and some fresh or frozen berries
1. Mix batter until well combined and almond flour is smooth.
2. On high heat, bring a frying pan to a very warm temperature, add a teaspoon of coconut oil and let it melt, spreading on the pan to avoid sticking.
3. Lower heat to medium and with a measuring cup pour pancakes onto the pan/griddle and wait until they begin to bubble on top and then flip.
4. Serve warm with some delish maple syrup and fresh berries.
