Almond Butter Pancakes

Makes 3 large pancakes

Ingredients:

  • 1 cup almond flour

  • 1⁄2 cup almond butter

  • 2 tsp of cinnamon

  • Pinch of sea salt 1 cup almond or coconut milk Splash of vanilla (optional)

  • Coconut oil Splash of maple syrup and some fresh or frozen berries

Directions:

1. Mix batter until well combined and almond flour is smooth.

2. On high heat, bring a frying pan to a very warm temperature, add a teaspoon of coconut oil and let it melt, spreading on the pan to avoid sticking.

3. Lower heat to medium and with a measuring cup pour pancakes onto the pan/griddle and wait until they begin to bubble on top and then flip.

4. Serve warm with some delish maple syrup and fresh berries.
