Cheese Burekas

These golden, flaky Cheese Burekas are filled with a delicious blend of ricotta, feta, and mozzarella, with a touch of fresh herbs for extra flavour. Easy to prepare with store-bought puff pastry, they make a wonderful appetizer, snack, or addition to a holiday table. Serve them warm from the oven and watch them disappear!

🌿 Ingredients:

Makes 10-12 servings 

  • 1 package puff pastry thawed (about 2 sheets)
  • 1 cup ricotta
  • ¾ cup crumbled feta
  • 1 cup shredded mozzarella
  • 1 egg, divided
  • 1 tbsp chopped parsley or dill (optional)
  • Black pepper, to taste
  • Sesame seeds (optional)

🥄 Directions:

  1. Heat oven to 400°F / 200°C. Line a rimmed sheet pan with parchment.
  2. Mix the ricotta, feta, mozzarella, herbs, egg white, and black pepper.
  3. Roll one pastry sheet just enough to fit the sheet pan. Place it on the pan and spread the cheese filling evenly, leaving a ¾-inch border.\
  4. Roll the second sheet to match. Lay it over the filling, then press and crimp the edges closed with a fork. Cut a few small slits across the top for steam.
  5. Beat the egg yolk with 1 teaspoon water. Brush over the pastry and add sesame
  6. Bake for 25–30 minutes, until puffed and richly golden. Rest 10 minutes, then cut into squares or triangles and serve.
