Colourful Beet, Orange & Feta Salad

Looking for a colourful and nutritious side dish for the holidays? Beets add a vibrant colour and fresh flavour to this salad! Beets contain vitamin C, fibre, iron, and high levels of B-complex vitamin folate. Chocked full of vitamin C, fibre, iron, and high levels of B-complex vitamin folate, beets are unique for their cardiovascular and heart health benefits. Beets get their jewel-like hue from betalains, a type of natural plant pigment that has antioxidant and anti-inflammatory properties. 

Ingredients

  • Mixed Greens
  • Orange Slices
  • Beets
  • 1 tbsp Olive Oil  
  • Feta Cheese
  • Apple Cider Dressing

Directions

  1. Wash the mixed greens and pat dry.
  2. Peel the oranges and break into slices
  3. Preheat oven to 400 degrees F. Peel the beets with a vegetable peeler and slice into two inch pieces. Drizzle with olive oil and roast for 30 mins or until tender.
  4. Toss all of the ingredients together and top with crumbled feta cheese and some light apple cider dressing.

Tip: Use gloves to protect your hands from staining when peeling and slicing beets.
