Colourful Beet, Orange & Feta Salad
Looking for a colourful and nutritious side dish for the holidays? Beets add a vibrant colour and fresh flavour to this salad! Beets contain vitamin C, fibre, iron, and high levels of B-complex vitamin folate. Chocked full of vitamin C, fibre, iron, and high levels of B-complex vitamin folate, beets are unique for their cardiovascular and heart health benefits. Beets get their jewel-like hue from betalains, a type of natural plant pigment that has antioxidant and anti-inflammatory properties.
Ingredients
- Mixed Greens
- Orange Slices
- Beets
- 1 tbsp Olive Oil
- Feta Cheese
- Apple Cider Dressing
Directions
- Wash the mixed greens and pat dry.
- Peel the oranges and break into slices
- Preheat oven to 400 degrees F. Peel the beets with a vegetable peeler and slice into two inch pieces. Drizzle with olive oil and roast for 30 mins or until tender.
- Toss all of the ingredients together and top with crumbled feta cheese and some light apple cider dressing.
Tip: Use gloves to protect your hands from staining when peeling and slicing beets.
