Pomegranate, Apple and Date Salad
This Pomegranate, Apple and Date Salad is perfect for Rosh Hashana, or any holiday! It’s beautiful, tasty and very easy to make; the perfect complement to many meals.

Pomegranates are a great source of antioxidants and vitamins A, C and E. They also have high levels of folic acid.
Dates are rich in calcium, iron and potassium as well as a number of other vitamins and minerals. Not only are they a great source of fiber in your diet, they help satisfy that sweets craving!
Walnuts are high in potassium, calcium and magnesium and are a wonderful way to get some omega-3 fats in your diet.
Tip: Add grilled chicken breast, tofu slices, fish or grain of choice on top to make it a full meal.

Serving size: 1 cup (Entire recipe makes 6 servings)
Ingredients:
- 1 6 oz bag of arugula
- 1/2 a small red onion (thinly sliced)
- 1 medium apple (cored and diced)
- 6 dried dates (chopped)
- 1/2 cup pomegranate seeds
- 1/4 cup walnuts (chopped)
- 1 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp honey
- 1 tbsp fresh lemon juice
- 1 clove of garlic (minced)
- Salt and pepper to taste
Instructions:
- In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, honey, and salt & pepper.
- Combine remaining ingredients in a large bowl. Pour in dressing and toss to combine.
