Refreshing and Nutritious Green Smoothie Recipe

After indulging in a few “not so ideal” options during COVID, I find the shift over to a healthy green smoothie as a perfect start to eating nutritiously again!! The blend of these ingredients stimulates some healthy bursts of flavours and reawakens our taste buds.

Serves 1

Ingredients:

  • 1 cup chopped romaine lettuce or any leafy greens
  • 1/2 cup baby spinach
  • 1/2 avocado
  • I sprig of mint
  • 2 tbsp hemp hearts
  • 4 tablespoons freshly squeezed lemon juice
  • 1 tbsp lacuma powder *
  • 1 cup water and ice cubes if desired

Place all the ingredients in a blender and blend to desired consistency.

Tip:  Add a little more water if the smoothie is too thick.

Enjoy!

* LUCUMA POWDERLucuma powder is a dried, milled version of lucuma fruit. Cultivated in the Andean region of South America, the fresh fruit is a nutritional powerhouse and commonly used in the foods of Chile, Ecuador, and Peru. The light brown powder has become a preferred natural sweetener worldwide. This plant-based sweetener with a maple-like flavor can be added as-is to beverages, smoothies, desserts, and some soups.
