Grilled Salmon with Pumpkin Seed Crust

Ingredients

Serves 4.

  • 4 salmon fillets
  • 1/4 cup pumpkin seeds, coarsely ground
  • 1/4 tsp unrefined sea salt
  • 1/4 tsp black pepper, freshly ground
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp turmeric
  • 1 tbsp Dijon mustard

Directions:

  1. Preheat the grill or BBQ to medium high; oil grill with olive oil.
  2. Mix ground pumpkin seeds and spices together in a small bowl and pour onto a plate for dipping.
  3. Spread mustard thinly on top of the salmon fillet, then dip salmon into the seed mixture. Pat extra seeds into the mustard to ensure evenly crusted.
  4. Place fish on grill, close lid if BBQing, and cook for 12-15 mins or until fish just flakes. Avoid overcooking.
