Kale, Apple and Ginger Lemonade

As we usher in the Spring season, I am loving this refreshing lemonade which is both sweet and sour in taste, energizing and nutrient dense in vitamins and minerals too. This is a great option as a juice or blended smoothie which I prefer which incorporates the fibre too.

 

Ingredients

  • 1 Apple (whole – red or green)
  • 1 Inch fresh ginger
  • 3 large stems of kale
  • ½ whole lemon

Directions

  1. Cut the apple into small slices and remove the core.
  2. Squeeze the juice of ½ lemon.
  3. Chop the kale into small pieces.
  4. Toss all ingredients above, including ginger, into blender.
  5. Blend to desired texture.

Tip

This recipe can be made in a juicer however, I prefer using the blender which keeps the FIBRE intact and has great taste and texture.
