Kale, Apple and Ginger Lemonade
As we usher in the Spring season, I am loving this refreshing lemonade which is both sweet and sour in taste, energizing and nutrient dense in vitamins and minerals too. This is a great option as a juice or blended smoothie which I prefer which incorporates the fibre too.
- 1 Apple (whole – red or green)
- 1 Inch fresh ginger
- 3 large stems of kale
- ½ whole lemon
- Cut the apple into small slices and remove the core.
- Squeeze the juice of ½ lemon.
- Chop the kale into small pieces.
- Toss all ingredients above, including ginger, into blender.
- Blend to desired texture.
This recipe can be made in a juicer however, I prefer using the blender which keeps the FIBRE intact and has great taste and texture.
